How to Make Crispy French Fries

French fries are one of the world’s most popular side dishes. Crispy on the outside and soft on the inside, they’re the perfect companion to burgers, fried chicken, or simply enjoyed on their own with your favorite dipping sauce.

Ingredients

  • 4 large potatoes (Russet or Yukon Gold work best)
  • Cold water
  • Vegetable oil (for frying)
  • 1 teaspoon salt
  • ½ teaspoon black pepper (optional)
  • ½ teaspoon paprika (optional)
  • ½ teaspoon garlic powder (optional)

Step 1: Prepare the Potatoes

Wash and peel the potatoes if desired. Cut them into evenly sized strips, about 1 cm thick, to ensure they cook evenly.

Step 2: Soak the Potatoes

Place the potato strips in a bowl of cold water and soak them for 30–60 minutes. This helps remove excess starch, resulting in crispier fries.

After soaking, drain the potatoes and pat them completely dry with paper towels.

Step 3: Heat the Oil

Pour enough vegetable oil into a deep fryer or large pot to fully submerge the fries. Heat the oil to 160°C (320°F).

Step 4: First Fry

Carefully add the potato strips in small batches. Fry them for 4–5 minutes until they become soft and pale but not browned.

Remove the fries with a slotted spoon and place them on a wire rack or paper towels to cool for about 10 minutes.

Step 5: Second Fry

Increase the oil temperature to 190°C (375°F).

Return the fries to the hot oil and fry for another 2–3 minutes, or until they are golden brown and crispy.

Remove the fries and drain any excess oil on paper towels.

Step 6: Season and Serve

While the fries are still hot, sprinkle them with salt and any additional seasonings such as black pepper, paprika, or garlic powder.

Serve immediately with your favorite dipping sauces, including ketchup, mayonnaise, cheese sauce, barbecue sauce, or garlic aioli.

Tips

  • Russet potatoes produce the crispiest fries because of their high starch content.
  • Dry the potatoes thoroughly before frying to prevent oil splatter and improve crispiness.
  • Fry in small batches to keep the oil temperature consistent.
  • Double-frying creates fries that are crispy on the outside and fluffy on the inside.
  • For a healthier option, bake or air-fry the potatoes using a light coating of oil until golden and crisp.
